It’s the middle of summer, and living is easy. Therefore we do NOT need any animal foods to stress out our bodies. Today’s lunch consisted of:
- Brown rice on nori w/vegenaise, ume paste, pea sprouts & gomashio
- David’s Organic Cole Slaw (different every time, recipe below)
- Steamed radish greens, turnip greens, scallions and kale
We might have needed a more powerful lunch if we were about to scale a mountain, but we are sitting around the house, playing cards, doing correspondence, and getting ready for the work week.
Recipe for David’s Organic Cole Slaw (all ingredients organic when available)
- Equal parts red and green cabbage, today I used about 1/6 of a small head
- A carrot, turnip, scallion, two red radishes, two celery stalks and a half cuke
- 1/4 cup Vegenaise, teaspoons of apple juice, toasted sesame oil, ume vinegar & shoyu, lemon juice & mustard, two sprigs fresh parsley, ground pepper, a dash of siracha and some caraway seeds.
- Mix in food processor and serve right away
