Five Food Myths

We learn about healthy eating from people who don’t know, or corporations who want us to buy their food or drugs. Here are five untruths:

  1. Fried Food Is Bad For You
  2. Animal Foods Are a Good Source of Protein
  3. Dairy Producs Are a Good Source of Calcium
  4. Tomatoes, Eggplant, Peppers, Potatoes & Spinach Are Good For You
  5. Eating Many Small Meals Per Day Is As Good as Three Square Meals

1. Fried Food Is Bad For You

We need oil in our diet. The problem comes when we eat too much, or old, hydrogenated, pesticide-laden, or saturated (from animal foods) oils. Restaurants typically use cheap oil, such as canola oil, and use it over and over, driving up the harmful effects. When we eat meat, eggs and dairy with harmful oils, we are putting a great strain on our cardiovascular and digestive systems.

Light sautéeing of plant-based foods in high quality vegetable oil such as sesame, olive, sunflower and safflower oils can be an every day thing for most healthy people. The keys are moderation, proper cooking methods, and having a pickle afterwards. Deep-frying of vegetables or tofu in healthy oils can be a weekly event for healthy people as well, and offer a nice way to put people in a great mood.

2. Animal Foods Are a Good Source of Protein

There are almost no people in the U.S. who suffer from protein deficiency. The topic is only relevant in places like Africa, where people do not get enough calories because of famine, war or extreme poverty.

Meat, eggs and diary have too much protein, and are extremely detrimental to your health, especially when eaten in high proportion to plant-based foods. If you continue to get more than 15% of your protein from animal foods, you are at risk for all kinds of health problems, from sheared blood vessels, to strokes, to cancers of many types.

An excellent source of proof on this is The China Study, by T. Colin Campbell, and there are dozens of studies on this .

Grains are very high in healthy protein, as are many beans and some vegetables. The human body is able to transform proteins as well.

3. Dairy Producs Are a Good Source of Calcium

This is a situation where lobbyists are destroying our health in order to serve their client, the dairy council. If you have good feelings about milk mustaches, perhaps you need to take a closer look.

Dairy foods are horrible for the environment, and cause a lot of suffering for cows. In addition, they are among the most harmful foods we can eat. The calcium in dairy is high, but due to high fat and protein, the calcium cannot be readily absorbed by our bodies, and therefore causes more harm than good.

Sadly, dairy foods are also very often tainted with iodine (used in the milking process to treat cows with mastitis, can cause thyroid problems), pesticides (dairy cows are often smeared with pesticides after their tails are cut off, they have been linked to cancer and allergic reactions), and dangerous bacteria such as listeria, e-coli and salmonella.

Ironically, there is a lot of calcium in chick peas, other beans, and especially in greens such as kale, collard greens, etc.

Again, very few people are suffering from not enough calcium. Osteoporosis, which looks to be a symptom of calcium deficiency, is an entirely different situation. When our blood becomes acidic, from eating too much animal foods, night-shade vegetables, sugar, alcohol, etc., it uses calcium leached from the bones of the pelvis, legs, etc. as a buffer. Doctors and nutritionists do not have this information in many cases, because it is fairly new.

4. Tomatoes, Eggplant, Peppers, Potatoes & Spinach Are Good For You

As was just mentioned, acid-forming foods cause a lot of health problems, including osteoporosis.

Certain vegetables, known as nightshades, have a high acid content. When eaten raw, or eaten in large amounts in winter, then can weaken your health. Unfortunately, Americans eat these nightshades in large quantities, especially potatoes and tomatoes.

When eaten in small amounts, in warmer weather, and properly cooked, salted etc., these foods can be eaten without too much damage.

Eating Many Small Meals Per Day Is As Good as Three Square Meals

Popular as a result of the skyrocketing rate of diabetes, eating many meals per day promotes obesity, digestive problems, and is an inefficient way to live.

The problem comes from eating foods with a high glycemic index, especially white flour, fruit juice, milk and sugar. For the most part, we have trained our doctors to give us advice and medications that appease us, but come back to haunt us, and diet and diabetes are no exceptions.

But, in the case that you are too busy to read right now, or don’t have time or money to buy it, I’ll once again be generous and give you some free tips. Here are today’s:

1) Be Mindful About Eating Animal Foods

Experts believe that only about 10-15% of our calories should come from animal foods. This is backed up by the fact that only four of our 32 teeth (incisors) are meant for cutting flesh. The rest are better for chewing grains and vegetables. There is also hard data from The China Study, by T. Colin Campbell, Ph.D., on disease rising rapidly over 15%.

Given the facts that animal foods tend to be from lower quality sources (factory farms, not free-range, fed an unnatural diet, given antibiotics, shipped long distances, colored and irradiated insteaded of being fresh), our health can be compromised, both short term and long term. This has been seen time and again with ecoli, listeria, etc., causing sickness and death all over our nation. Furthermore, it is believed that Alzheimers and many other conditions, are as a direct result of diets high in animal fat.

When we eat large amounts of animal foods, without being mindful, we often don’t want to think about the pain and suffering of the animal, nor what it does to our environment. But in the process of closing down our sensitivity, we lose our intuition, and moral compass. Then we are more likely to get into an accident, or hurt someone we love by being selfish or ego-driven. We are witnessing this all over the place. There is a great wealth of evidence about this, and a wonderful book called The World Peace Diet, by Will Tuttle, PhD. covers this as well.

So be more mindful. Eat less animal foods, and choose organic when you do. Say a prayer for the animals, and don’t waste animal foods. And if you get a chance, read The China Study, or The World Peace Diet.

2) Learn to Cook and Cook Every Day, with Mostly Organic, Plant-Based Foods, Local and In Season

This is very difficult to do, even if you shop at Whole Foods. More and more organic foods are coming from Chile, Mexico, and elsewhere. Used to be, all produce was local and organic. It can be this way again, and eventually, my bet is, it will be. However, it may take a calamity to bring it. So far, the loss of 50% of the bees, and many other species, and rampant suffering by animals, and disease by humans, and massive pollution of our air, water and soil has not helped us change our food system. But it takes time.

Meanwhile, do your best. Take a cooking class. Buy a cookbook, and use it. At a minimum, cook one healthy meal for yourself and your family every day, with a boiled grain, an organic vegetable, and possibly legumes, sea vegetables, nuts, seeds, and miso or pickle. My family cooked three organic, plant-based meals yesterday. We loved the food, it cost us less, and we feel good about the health benefits.

Why Hot Sake Is Good For You

If you don’t drink and it’s working for you, great, don’t start now.

But, most Americans drink wine, beer or spirits each week, and there have been arguments that it can be healthy.

My view, is that we need to reduce our stress to be healthier. Alcohol can do this, when consumed in moderation. Unfortunately, wine and spirits are often too strong for us, are toxic to the liver and induce cravings. Beer is good, but drinking more than one strains your kidneys in addition to your liver.

Also, please keep in mind that there is a shortage of grain worldwide, and making and consuming large amounts of alcohol is unsustainable.

Next time you are having a meal with animal protein, serve hot sake right after the meal

Or, when you get home from work and feel like snacking on something crunchy, heat up a small glass of sake.

What Have We Learned In Ten Years

Today is ten years since 911.

I think people have learned a lot. Most of us are more grateful, and know life is precious. We also are more careful.

But as a nation, our learnings and our practices seem a bit one-sided. More than ever, we are the bully.

More than ever, we are insistent that things need to be done OUR way.

I don’t advocate being a pushover, nor letting the complacency or lesser ideas rule us. But I do think that the people with lesser voices, as well as the animals and the planet need a voice.

It would be nice to see us eat more naturally, and take better care of our animals, waterways, land and air, for the benefit of all living beings. It’s relevant here because nature gives us all a sense of peace, and freedom, such that we don’t need to fight for it.

May you have a peaceful and meaningful day.

A Recipe for Better Health and a Longer Life

I have about a half dozen up here, and will soon have more. Please try these out, and let me know how you enjoy them. They are ultra low-fat, balanced dishes that can give you the energy you need to live a great life, without health problems.

Try to stay out of restaurants as much as possible. They generally add a lot of animal foods, and the freshness may not be as good as you will find at home. Most do not use organic produce, and who knows what else gets into the food (blood, sweat, etc.).

Staying On Track

Yesterday I met a person who has become successful at improving preschool and elementary education in the area. She impressed me not only with the current state of her business, carefully expanding while focusing on top-notch operations, in a very challenging economy; But also with her vision, which makes me want to work with her so I can learn from her, and be involved with such a worthwhile project as helping educate children.

I am more able to stay on my track to help people become more natural so they can improve their health and results, as a result of my meeting this very successful educator and entrepreneur, because I noticed how she is very thorough, strategic, open-minded, and hard-working in her business. I believe she is in excellent health and that also supports my vision that health creates a better life.

Got The Facts On Milk?

Please read the article from G (The Boston Globe) on Monday Sept. 5 reviewing the new movie on consumption of dairy.

Yes, milk products taste good, and are addictive. We also are in good company when we consume milk products. They are everywhere. The dairy industry has made sure that we feel good about drinking milk.

My strong opinion, based on much research and observation, is that cow’s milk is poison. Like pus, or glue, or feces, we should not be eating it. Because we do, we have many health problems, our economy is on life support, and our environment is suffering.

The article is worth reading, but as the reviewer points out, there is no proof in the movie. The only way to REALLY get proof is to live one week without dairy. You will see you are no longer stuffy, you smell better, you have more energy, your skin looks better, you sing better, your vision is clearer, and you are in a better mood. Is that worth anything to you?

What To Buy For A Healthier Kitchen

Okay, so I’ve been talking about organic grains, vegetables, beans, etc., but what about kitchen and cooking supplies?

There are lots of ideas worth eventually investing in, like a pressure cooker, immersion blender and suribachi, while others are cheap enough to get right now, like wooden utensils, a sushi mat to roll sushi, or cover warm foods, and a knife sharpener.

The hardest of these to find may be the canning funnel. I got mine at Duck Soup, in Mill Village, Sudbury.
